Cutthroat Trout is the fly-fishing prize, pan-fried in a cabin skillet. Sourdough Biscuits are cowboy bread and Beef Jerky is open-range cattle, dried. Indian Tacos are powwow tradition, Rocky Mountain Oysters are festival food, and Chili with Cinnamon Rolls is, improbably, real. What Wyoming is famous for is lean, wild, and shot in season. So what is Wyoming's official state dish? That is what the vote decides.
