South Dakota's ballot holds two food cultures at once. Lakota kitchens contribute Wasna, bison pounded with chokecherries and fat, along with Wojapi and Indian Tacos on fry bread. German-Russian settlers left Kuchen, now the state dessert, and Tiger Meat, raw beef on bread at Christmas. Bison Stew and the Bison Burger come off local herds. Chislic is cubed, fried, and salted. Walleye is the lake reward and Pheasant the other harvest. What South Dakota is famous for comes off the prairie, cubed and salted. So what is South Dakota's official state dish?
