New Hampshire's ballot follows the sugaring calendar. March brings Sugarhouse Pancakes, Maple Sugar Candy, and Maple Cream Pie. Fall brings Apple Cider Donuts, eaten warm at the orchard. Winter is Boiled Dinner and Indian Pudding, with Tourtière on Christmas Eve in the Franco mill cities. Summer means Boiled Lobster with a paper bib and Smoked Brook Trout from a fishing camp. And Manchester claims Chicken Tenders, invented there in 1974, served with duck sauce. What New Hampshire is famous for is boiled down from a tree. So what is New Hampshire's official state dish?
